"Keeping with the tongue-twisting names, the first sweet white, a glorious rendition of the traditional Tostado from Ribeiro is the 2011 As Pasas Dos Pasás. It was produced with Treixadura grapes that were dried in the cellar for months to concentrate the juice. The wine fermented slowly and matured in barrel for four years and was kept in bottle for a further five years before being released. It has a mahogany color and a complex nose of brown sugar, dried apricots, marmalade, quince and toasted bread. It's 13% alcohol and has 188 grams of sugar per liter, quite sweet but not cloying, kept in balance by nice acidity. Only 600 half-bottles were filled in December 2015."
